At 1818, the gourmet restaurant at Château de Pondres, chef Jean-Baptiste Couturier creates modern, assertive cuisine deeply rooted in the South of France and open to the Mediterranean. Gastronomic classics are revisited with creativity without ever being betrayed: deconstructed bouillabaisse that retains the soul of the coastal harbour, pigeon served in two courses where sous-vide cooking enhances the meat before the skin is crisped under the salamander, and Nyons olive spherification that bursts like a childhood memory.
The terroir of Provence and Corsica guides every dish: fresh fish from the Grau-du-Roi fish market (landed in the morning), free-range poultry from Colognac, and homemade foie gras by Gubernat (a stone’s throw from the château). Suppliers are chosen for their commitment. Ecology is not a slogan: it is on the plate.
In winter, enjoy the cosy atmosphere of the Château de Pondres music room and let yourself be surprised by the new culinary signature. When the warm weather returns, the aromatic garden is transformed into a terrace, offering an exceptional setting to savour the exceptional cuisine of 1818.
