Domaine de l’Auribelle is divided into several parcels around the villages of Caux and Néffiès, in the foothills of the southern Cévennes, benefiting from a wide variety of soils, exposures and grape varieties. The vines are between 20 and 40 years old. The winegrowers are committed to preserving the ecosystems (hedges, copses, embankments) which help to safeguard biodiversity and stimulate the vines’ natural defences. The vines are grown with great care and respect for the environment and the terroir, using no chemicals or insecticides. The grapes are harvested by hand and the winemaking methods are natural. The wines are not fined or filtered. The winemakers seek the best phenolic maturity and limit extraction to express freshness, finesse and respect for the typical character of the Pézenas terroir.
