Maison Pellestor Veyrier is a modern gastronomic restaurant in Colomiers (formerly Amphitryon), run by chef Quentin Pellestor-Veyrier.

His contemporary cuisine pays tribute to the Occitan region with refined dishes and high-quality produce.

La Maison Pellestor Veyrier is a gourmet restaurant located in Colomiers (31), at 28 chemin de Gramont, in the former L’Amphitryon building.

Run by chef Quentin Pellestor-Veyrier and his partner Camille Hubert, the restaurant offers modern cuisine with deep roots in the Occitan region.

Its menu is a tribute to gastronomic traditions: from the South-West (foie gras, duck breast, veal from Ségala) to the Mediterranean (rouille sétoise, oysters from the Étang de Thau, black olives), all revisited with finesse and boldness.

The chef uses seasonal produce, sourced locally, in a responsible and demanding approach.

From an aesthetic point of view, La Maison offers an elegant and intimate setting with soothing tones, an open kitchen and a large terrace.

The service is meticulous, supported by a harmonious team, and the sommelier offers a refined selection of wines and exceptional non-alcoholic pairings.

Open from Tuesday to Saturday, the restaurant offers a range of menus, including a 5-course “halte déjeuner” menu, a 7-course “transhumance” menu and a 5-course “champêtre” menu. Finally, the restaurant has already been praised by Gault & Millau (3 toques, 16/20) for its creativity and technical mastery.
