“My aim is to offer you a gourmet, festive, enjoyable wine to open on social occasions such a family meal, a drink with friends, a romantic dinner… quite simple really.” On three hectares of schist and old terraces of galets roulés in Saint-Jean-de-la-Blaquière: a vineyard outpost just before the Larzac, the old vines of Syrah, Grenache and Cinsault, cooled by the presence of the plateau but remaining a true southern terroir made famous by those rounded pebbles. That is the profile of my cuvée: Douceur Céleste Au-Delà des Rêves is a wine with cellaring potential that has been barrel aged for 14 months, a rich, powerful wine with notes of liquorice, the palate dense and very fleshy, and finishing with a pleasant minty freshness.
