La Boucherie restaurants have chosen to integrate their own cutting workshop located in Brive-la-Gaillarde in the heart of Limousin. This allows me as a restaurateur to guarantee a controlled quality of supply throughout the year, especially in terms of selection and traceability.
The workshop enhances the carcasses in the maturation chamber, and the traditional know-how of 40 trained butchers guarantees optimal maturation of meats and perpetuates specific cutting techniques to enhance forgotten muscles such as spiders.

You can book or drop in every lunchtime from 12:00 to 2:30 p.m. and every evening from 7:00 p.m. to 10:30 p.m. Sunday through Thursday and we take the last orders until 11:00 p.m. Friday and Saturday evening. “
