Frédéric chooses his products from local producers (Pardailhan turnips, Combebelle goats, La Treille goat cheese, …). Nathalie selects the best vintages of the St Chinian and Coteaux de Berlou appellations, establishing a beautiful wine list at low prices. A sensitive research work in order to share their findings, both at the culinary level (cooking classes at the restaurant and at home or oenological tastings in the presence of the winemaker) and at the landscape level; botanical walk to recognize the wild food plants that Frederic uses.
