The Table de Franck Putelat, which has held two Michelin stars ever since 2012, offers an inventive cuisine. The chef himself describes his cuisine as “classical fiction”: it takes the classics of gastronomy in a new direction, transporting dishes to another era, telling its own story in a “fiction”. In the green setting at the foot of the ramparts of the medieval city, the spirit of Frank Putelat has created a place of designer elegance, like a bright jewel. The restaurant, with its contemporary design, provides a contrast to the traditional buildings of Carcassonne.
