La paillote welcomes you to share a moment over one or more cocktails. Wine is not forgotten either, as are the great classics. A sunset with a view of the sea, a cocktail in hand or a good glass of wine with good quality Tapas. Jérôme Demonchy and Alban Perez 2 partners, friends, Globe trotters who have spent the last 6 years travelling around the world to bring you a service from elsewhere! Jérôme has a passion for rum and is a seasoned barman, creating original cocktails based on quality products to suit your tastes, as well as classic cocktails. With 15 years’ experience in the restaurant trade, from 3 Michelin stars to luxury brasseries (Gerald Passedat & Paul Bocuse), Jérôme is passionate about sharing his knowledge. Alban is an oenophile who has worked in prestigious establishments such as Paul Bocuse (Auberge de Colonge), Shannon Bennett (Vue de monde) and Neil Perry (Rockpool bar and grill). So welcome and cheers!
