In 1962, Henri Gineste de Saurs opened “L’Entrecôte” in Toulouse, a restaurant modelled on “Le Relais de Venise – Son entrecôte” created a few years earlier by his father in Paris. Since then, the black and yellow sign has expanded to Bordeaux, Nantes, Montpellier and Lyon with its waitresses traditionally dressed in yellow and black in a Scottish wall decor. We come to appreciate the unique formula unchanged for more than 50 years: walnut salad, finely cut sirloin (170 grams slice of beef) accompanied by its famous sauce with its secret composition, homemade fries at will, to finish on a dessert prepared by our pastry chefs.
