Beneath the roof of the old barn you can try José Laurens’ local cuisine with a modern twist. On the menu: Pork cheek confit with black pudding sauce, calf’s head in a spicy sauce, foie gras crème brûlée, frozen nougat with Lozère honey and Cévennes tart.
