Saint-Sauvy is a picturesque village in the Gers, offering a peaceful and green rural setting.

The commune has a church dating from 1549, and rebuilt in place of the old church that was burned. It rests in part on the old enclosing walls. Its bell tower built in 1671 collapsed in 1906, and was rebuilt around 1908. It was rebuilt but the old one was regretfully kept. People were then jealous of that of Puycasquier. Dans les années 14-18, il se disait à Saint Sauvy, raconte Germaine P. : « Puycasuqé, petito bilo, gran clouqué, quant le clouqué ï plèn de pailho, laï gents soun canalho, quant le clouqué ï plèn de hèn, laï gents que balen rén ! (avec la graphie de l’époque). Translation: «French castle, small town, big bell tower, when the bell tower is full of straw, people are scoundrels, when the bell tower is full of hay, people are worth nothing!».

The commune has a second church, that of Lucvielle.

In 1898, the coal epidemic contributed to the construction of the Saint Roch chapel. This chapel is currently private property and has been recently restored. The cattle were led there for a blessing.

The cemetery of Saint-Sauvy has a crypt, which makes it special.

The commune still has some vestiges of the old defensive walls, notably remnants of towers and the walls of houses on rue du Nord.
Another must-see in the town is the circular basin of Touron where the washerwomen used to come, rinse and beat the laundry. Touron means ‘source’ in pre-Latin, there is indeed an inexhaustible source that flows from this place.
At the exit of the village is a well whose peculiarity is to have a small conical roof.

The Cave of Touron has become a communal fountain. This healing fountain was once a temple with a sacred source. Indeed, Touron, from Taraux, belongs to a Welsh memory.

From its elevated position with a view overlooking the Arrats, Saint Sauvy has probably been occupied since prehistoric times. Archaeological excavations were conducted by Catherine Petit on different sites in the municipality. Mosaics, painted coatings of a villa, tiles and pottery have been updated. In total, there are about fifteen sites in the municipality that have recorded presences of Gallo-Roman occupation.

The commune has a type 2 ZNIEFF “Le cours de l’Arrats” covering 815 hectares in 30 communes.
