About

The Sauveplane farm is located in a small Cévennes valley in the heart of a chestnut grove.
It was with a view to preserving ancestral know-how that the project to upgrade this chestnut grove was born.

Chestnut cultivation in the Cévennes is deeply rooted in the region and its inhabitants, but is gradually being lost due to a lack of players and initiatives, despite the fact that chestnut trees have outlived mankind.
It’s the strength and resilience of this tree that has inspired me to spread the word about its fruit, rich in flavors and virtues.
Chestnut cream and chestnut jam, of course – how could you miss them?
But also the drying of chestnuts over a wood fire in a traditional clède for 3 to 5 weeks, to obtain the chestnuts and the flour.
And of course, hand-picking, a privileged moment with the trees.
While the chestnut tree rests from November to March, the chestnut grower works all year round. Orchard maintenance, disease control, pruning, harvesting, processing, sales…
