Nestled in the hills between the Via Domitia and the village of Montagnac, the Saint-Hilaire estate covers 75 hectares, 30 of which are used for wine production.
Dating back to the 18th century, it is owned and run by Lisa and Nick Kent, who offer top-of-the-range accommodation in the renovated bastide.
The wines produced here combine traditional Languedoc values with a dynamic new-world approach.
Renowned for their award-winning wines, the philosophy is to intervene little and let nature express the qualities of the different terroirs.
Freshness and minerality have been the main assets of the wines produced here for 200 years.
The winemakers cultivate ten grape varieties that are typical of the Languedoc region, such as Grenache and Syrah, as well as Chardonnay and Cabernet Sauvignon, which take on a very special character thanks to the warm, sunny Languedoc climate.
