About
Since 2013 Gregory has been cultivating almost 9 acres of vineyard in the respect for human life, as much as in the vine as in the cellar. The vines aged between 25 to 80 years are situated in Aspiran and are for the most part planted in goblets. The encepagement is composed of traditional Languedoc grapes : grenache, syrah, carignan and cinsault for the reds : white grenache and terret-bourret for the whites. The grape harvest is done manually and the raisins are taken to the cellar in small crates. They are put into vats by hand after destemming. The raisins ferment naturally and slowly then they are matured in vats.
