Only an Appellation d’Origine Contrôlée can meet such requirements. It is in this spirit that, since 1995, breeders have worked tirelessly alongside the Institut National des Appellations d’Origine Contrôlée (I.N.A.O) before they were officially awarded this prize on 15 September 2003. The European Commission reinforced the specificity and the qualities of this product by awarding it the European recognition on 01/03/2008: the Protected Designation of Origin. The Slow Food movement also recognizes the exceptional quality of the Barèges-Gavarnie PDO by counting it among its sentinels. In the sheep production sector, this AOC is the first to have been recognised in France and Europe. .
