Our traditional, family-style cuisine features dishes made with fresh produce from our Ariege and Aude producers. The menu includes

. Gravlax of Aston trout marinated in Guérande salt, rose berries and dill, served with green salad and organic potatoes from Pays de Sault.

. Azinat, a traditional Ariège dish featuring cabbage, potatoes, carrots, duck confit, rind sausage and rouzole (a stuffed patty made from Ariège pork).

. “La Marmottiflette”, a tasty option for vegetarians, with organic potatoes, onions, cream and Ariège cheese, served with green salad.
